This weekend in Austin, it hit 100+ scorching degrees. After spending three straight days at the Hot Luck Food Festival, we were PARCHED. We reminisced about the refreshing mint lemonade from Morocco and set out on a mission to recreate it.

This recipe isn’t an exact replica of the drink we had at Cafe Clock, but it’s pretty darn tasty. We even plan on sneaking in a shot of vodka into a glass of this mint lemonade to enjoy poolside this summer!

REFRESHING, MINT LEMONADE

Makes 1 full pitcher, about 6 glasses
Ingredients:
  • 2 lemons, cut into small pieces, skins on, with seeds removed
  • Juice of 2 lemons
  • 35 leaves of fresh mint
  • 4 cups cold water
  • 2 cups ice
  • 1 cup of granulated sugar

Combine all ingredients in a blender. Blend until all the lemon pieces are pureed, about 3 minutes. Empty the blender though a fine mesh strainer, into a pitcher. Discard the pulp. Serve the mint lemonade over ice with additional mint garnish.
